Ingredients

  • 2 boneless chicken breasts

  • 2 cups cooked rice

  • 1 cup grilled corn kernels

  • 1/2 cup cotija cheese

  • 1/4 cup mayonnaise

  • 2 tbsp sour cream

  • 1 lime (juice)

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • Cilantro & avocado (optional toppings)


Instructions

    1. Marinate chicken with olive oil, lime, garlic, chili powder, paprika, salt, and pepper.

    2. Grill chicken and corn until cooked and charred.

    3. Prepare sauce by mixing mayo, sour cream, lime juice, chili powder, and paprika.

    4. Assemble bowl with rice, sliced chicken, corn, sauce, cotija cheese, and toppings.
