Description

Sweet caramelized pineapple + buttery cake in cupcake size—fun, easy, and adorable!


Ingredients

  • 6 pineapple rings (halved)

  • 12 maraschino cherries

  • 4 tbsp butter, melted

  • ½ cup (100 g) brown sugar

  • 1 cup (125 g) all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • ½ cup (100 g) sugar

  • 2 eggs

  • ½ cup (120 ml) milk or pineapple juice

  • 1 tsp vanilla extract


Instructions

  • Preheat oven to 350°F (175°C). Grease muffin tin.

  • Mix butter + brown sugar, divide into muffin cups.

  • Add pineapple + cherry to each.

  • Whisk flour, baking powder, salt.

  • Beat sugar, eggs, milk, vanilla; combine with dry mix.

  • Spoon batter ¾ full into cups.

  • Bake 18–22 minutes until golden.

  • Cool 5 minutes, invert onto tray, serve warm.
