6 pineapple rings (halved)

12 maraschino cherries

4 tbsp butter, melted

½ cup (100 g) brown sugar

1 cup (125 g) all-purpose flour

1 tsp baking powder

¼ tsp salt

½ cup (100 g) sugar

2 eggs

½ cup (120 ml) milk or pineapple juice

1 tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C). Grease muffin tin.

Mix butter + brown sugar, divide into muffin cups.

Add pineapple + cherry to each.

Whisk flour, baking powder, salt.

Beat sugar, eggs, milk, vanilla; combine with dry mix.

Spoon batter ¾ full into cups.

Bake 18–22 minutes until golden.

Cool 5 minutes, invert onto tray, serve warm.
