2 cups (250g) all-purpose flour

1 cup (100g) cocoa powder

2 cups (400g) sugar

1 cup (240ml) vegetable oil

3 eggs (room temp)

1 cup (240ml) buttermilk

1 tsp baking soda

1 tsp baking powder

1 tsp vanilla extract

½ cup (120ml) strong brewed coffee

1 cup (125g) chopped pistachios (divided)

Chocolate ganache glaze (melted chocolate + cream)
Instructions

Preheat oven to 350°F (175°C). Grease bundt pan.

Mix dry ingredients in a bowl.

Mix wet ingredients in another.

Combine until smooth.

Fold in ½ cup pistachios.

Pour batter into pan, bake 40–45 mins.

Cool, drizzle ganache, sprinkle remaining pistachios.
